Zucca Pasta

With all the abundant summer zucchini at the farmer's markets, here's one of our favorite ways to incorporate it with Dream Factory pasta.

Ingredients:

2 large zucchini, coarsely grated or chopped into thin, short sticks

2 garlic cloves, thinly sliced

3 TBSP fresh Dream Factory Ricotta cheese

1 TBSP butter

1 package fresh Dream Factory Pasta

1/4 tsp Sweet Paprika

3/4 C pine nuts or chopped walnuts

Olive oil

Fresh chopped basil and mint leaves

salt & pepper

1/2 C hard cheese, such as parmesan

  • Toast nuts in a dry skillet on medium heat for about 3 minutes until fragrant and slightly toasted, then set aside to cool and chop them coarsely.

  • Cook pasta in a large pot of salted boiling water. Reserve ½ cup cooking liquid.

  • Heat olive oil in a large frying pan, add zucchini. Toss for a few minutes.

  • Add garlic, paprika, Dream Factory Ricotta, and cooking liquid, continue to stir for 2-3 minutes.

  • Mix in 1 tbsp butter, season with salt and pepper, mix gently.

  • Add pasta to the zucchini pan.

  • Add grated parmesan cheese, chopped mint and basil and nuts. Toss everything together.

  • Just before serving, sprinkle with more parmesan cheese, chopped mint and basil. Serve immediately.
