Easy Homemade Coconut-Almond Butter

This is all going to basically come down to what type of blender/mixer situation you’ve got going on. If you have a Vitamix, or some sort of super powerful blender, chances are there is either a ‘nut butter’ pre-set option or simply, you’ve got enough power to ensure your motor doesn’t burn out. Oh, food processor is also an a-okay option on the power front. From past experience, if you have a blender that doesn’t have some serious wattage; blend slow, continue to scrape down, and as needed if the blades get stuck, you might simply need to add more oil to keep ‘em rotating. Pro Tip Here: soak your nuts overnight before blending if you don’t want to add extra oil. They’ll breakdown easier & there’s plenty of arguments out there that sprouting or soaking your nuts is optimal for digestion.

But, have patience. Almonds (or really, whatever nut you choose) in a blender, eventually will break down & turn into almond butter. We’ve added the oil for a smoother spreadable consistency & the coconut because… well it’s simply delicious & you’ll probably end up adding it to all your nut butters if you regularly make them at home.

The twist here, that is key… fundamental even, is the addition of the shredded coconut. We’re recommending unsweetened coconut as there’s a natural sweetness, an earthy-ness that is conveyed from nut butter. But by all means - if you’re looking for a sweeter spread, perhaps for a dessert or simply a sweeter nut butter then go for it with sweetened coconut.

Is homemade nut butter a cost saver? That depends on where you live & what type of almonds you buy. 1lb (16oz) of almonds will yield 1lb (16oz) of almond butter. Check what your price of almonds are vs. the jars available. We could get into a whole other almond universe on organic vs. non, farming processes used, growing regions - but alas, this is going to be short & sweet so you can make some nut butter.


Easy Homemade Coconut Almond Butter

Yield: 1 1/3 C / Time: 10mins / Difficulty: 3/10

Ingredients

1 1/3 C Roasted Almonds

1/4 C Raw coconut chips (unsweetened)

1 1/16 Tsp salt

2 Tbsp olive oil

Steps

  1. Place almonds & coconut in blender. If you have a pre-set nut butter option on your blender, go for it. If not, continue to pulse, scraping down the sides of the blender as needed.

  2. Once nuts have broken down, add olive oil. If you can, while the blender is running.

  3. Violá. Nut butter!
